Provide Chess Boards & Chess Sets for patrons to use. The tables could have chess boards painted on them. Charge a refundable deposit when a chess set is checked out. Have checkers and the Chinese game of Go also available. Decorate the walls with black & white photos of famous academicians from a wide range of disciplines and photos of iconic universities. One night a week, have something like a jazz pianist or a folk guitarist playing soft background music.

come up with cool gimmick for profs to host their office hours at your place. be selective and reward the ones you choose. design and professionally produce signs for them to put on their doors directing students. focus on most popular profs. esp. in creative fields: mktg, adv, philosophy, etc. rotate departments or individuals by day or by week. take a lesson from 'vegas' choose the whales & take care of them. in your case it may be the hot male profs with female enrollment at 90% . . . I'm just sayin'. free hors devours hour daily and don't be cheap. not popcorn, peanuts, and pretzels.

Brainy people prefer a variety of music and are turned off by 'familiar' songs on most all radio stations. At this particular time in history there is a station that both young and old consider cool. Its called Deep Tracks and its on XM. It models itself after the original FM rock stations. Tom Petty and Bob Dylan are DJs who are revered by the younger and older generations.

Have some leather armchairs and couches in the lounge, and have a selection of books (perhaps mostly reference books and classic literature) in quality shelves so professors and students can refer to them while conversing.

Make it sophisticated by killing the music. You should only hear people talking. Entertainment should be done by bringing in guest speakers from the outside of college life. Have a Wall of Life what people can use to place information, but also use to discus about ideas.

1- keep it cheap (obviously) by highlighting the 'emerging' wine regions of the world. These are trendy in elite circles anyway- but get off the beaten path: Mexico, South Africa. Make people feel like they're ahead of the curve for drinking your wines- and it's cheap! 2- educate- Profs & students love to learn, but don't depend on separate lectures/events. People don't have time for one more thing. Make education a part of the menu, the restaurant, the bathrooms, the wallpaper, the paintings. everywhere. Tell stories about where the wine comes from and what makes it interesting. 3- free wifi. Students and professors love getting their buzz on while letting the writing flow. Trust me. I would spend probably $30 a week at a wine bar with free internet. I know it's not much- but it adds up if you get a bunch of students, profs in on the game

Never drank more wine regularly since the days of Cafe Les Amis. Many of us grad students would hang out there and order one carafe after another for our group. Inexpensive food options and a fireplace (for ambiance) make it easy to make the place a regular hang-out. Higher-quality items should be available to entice folks to stay for a more traditional meal. This would be a decent way to compete with a bar. I'd avoid the whole wine education/enthusiast thing. Just because I want to drink wine doesn't mean I want to join some cult :-)

"i'm not comfortable with the carafe idea. it works in european cafes and bistros. but i'd like to see you go more hi-tech. if you can't afford an enomatic machine with reloadable cards just yet, try to mimic the concept of easy, multiple, user-defined pours by the glass and add some sort of 'membership' card. then when you can afford an enomatic it is an easy switch for your clientele."    - julianna

Have classes/lectures by you (or vendor reps) on featured wineries. Talk about the winery, it's history, their wines, what makes their wines unique as well as how to pair wine with food. Offer the opportunity for students/profs to make their own wine on-site (wine making is easy!). Also sponsor a "Favorite Cheap Wino" contest whereby customers can vote for their favorite (and cheapest!) bottle of vino. Selection could rotate weekly/monthly. Sell a large variety of wines by the glass, yet offer the opened bottles at a discount in order to move inventory.

Bottles are always cheaper than buying by the glass. So have a board at the front where people can sign up as wanting to share a bottle (of a certain type or varietal) with someone. Encourages interaction and saves money. It's only 2 glasses apiece.

If your goal is truly to encourage interaction between students and professors, then the students might appreciate a "discount" for bringing a prof in the door, and the profs may appreciate "free merchandise" for encouraging students in the door.
